A Mediterranean dense bean salad is one of my favorites. This is bright and punchy and the perfect meal prep. I’ve been using the Wildbrine fermented bean salads, they’re fermented, seasoned and flavored chickpeas that are the perfect way to add some probiotics and an additional layer of seasoning to a dense bean salad! Wildbrine’s fermented bean salads have 20g of protein, 20g of fiber and live probiotics!

Wildbrine Fermented Mediterranean Dense Bean Salad
Makes 6 x 16oz containers

Ingredients
For the Salad
1 jar of Wildbrine Mediterranean Fermented Chickpea Salad (available at Whole Foods)
1 rotisserie chicken broken down and diced
¼ of a red onion minced
2 bell peppers, cored and diced
1 pint of cherry tomatoes, sliced in half
5 oz feta, crumbled
2 tbs dill, minced
¼ cup flat-leaf parsley, minced
For the Dressing
1 clove of garlic, crushed
¼ cup olive oil
3 tbs white wine vinegar
Juice of half a lemon
½ tsp Aleppo pepper
2 tsp Dijon mustard
Instructions
Drain the chickpeas (Don’t rinse them) and set aside while you prepare the rest of the salad.
Mince the red onion, dice the bell peppers, halve the cherry tomatoes, and mince the dill and parsley.
Add the chickpeas, chicken, red onion, bell peppers, cherry tomatoes, feta, dill, and parsley to a large bowl.
In a small container, mix the garlic, olive oil, white wine vinegar, lemon juice, Aleppo pepper, and mustard. Whisk or blend until creamy and smooth.
Pour the dressing over the salad and toss well till fully combined.

This was so yummy and tangy! I added an extra serving of chick peas (just a plain can) and some artichoke hearts.
I don’t have a Whole Foods nearby, so I added some marinated artichoke hearts as others recommended. It was a little dry for me personally on the taste test, so I added a bit of EVOO, vinegar, and the other half of the lemon’s juice to it. It was delicious as always!
