Back-to-school season is fast approaching! I start classes on September 9th which feels so soon. I wasn’t allowed to post much of my undergrad student experience because I was a student-athlete and NCAA image and likeness laws were still in place, so I wasn’t allowed to be in the creator fund and show anything relating to my school while I was an athlete. So I am VERY STOKED to finally be able to take you guys behind the scenes of my culinary school experience, I talked to the CIA and they are super happy about my social media and I’m more than welcome to post! Side note, I keep telling people I’m going to the CIA and they think I’m joining the covert government org not the Culinary Institute of America, I am in fact going to the latter.
As a new student, I’m going to be commuting an hour each way which doesn’t leave a ton of time for cooking but I still want to get healthy, high-protein meals in. This week I decided to do some throwback recipes. My mom would always make us Van’s GF toaster waffles when we were in a rush getting out the door so I made my own spin on them making them with Greek yogurt and egg whites for protein and homemade ofc. They’re perfectly fluffy and the easier grab and go breakfast before school I made some curry chicken salad which was a favorite of mine growing up, it’s delicious on its own or in a lettuce wrap or sandwich. The hack to the most delicious chicken salad is sour cream AND mayonnaise. And of course, I had to do a Dense Bean Salad, my favorite of all time is the Sundried Tomato DBS but I found this Calabrian Chili Salami at the Farmer’s Market and did rotisserie chicken instead of chipotle this week.
