Strawberry Cheesecake Oats
Bright fresh strawberry oats layered with skyr and a crunchy graham topping!
Hi everyone! I hope you’re having a great week. If you follow me on Instagram, you know I’m planning a summer pop-up tour (Philly, NYC, Miami, Charleston… a few more in the works). My pumpkin parfait oats have been my best-selling item at my farmer’s market booth. This recipe is my new spring version that’ll be debuting at the Philly popup! Oats and yogurt together are a delicious combination and, in my opinion, the perfect balance of fiber and protein.
This recipe uses blended fresh strawberries. I find cooking strawberries absolutely destroys their flavor for some reason. Adding a tiny bit of lemon truly brings out their delicious flavor. The “graham” topping melts into a thin, crispy oatmeal cookie texture you can break into a crunchy crumble that really tastes like graham crackers. Unfortunately, this does not stay super crunchy after about day 3. I’ve tried multiple ways to get it to stay crispy, and nothing has worked (it still tastes good, though). This topping is optional but delicious. You can also easily top it with crumbled graham crackers if you want instead!
I always get questions about these little jars, they’re glass and all components of the jars break apart making them very easy to sterilize and plastic free. They’re the perfect size for one serving of oats and adorable
Skyr Yogurt
I used this new brand, I’m obsessed with called Painterland Sisters (not sponsored). It’s a small female (sister) owned and founded brand that uses completely regeneratively farmed milk. The yogurt is exceptionally creamy, almost cream cheese-like in texture. 10/10 reccomend!
Sweeteners
A little sugar added to the strawberries is really good. If you don’t want to add sugar you can swap for 1/4 cup of honey or maple syrup in the strawberry mixture and omit the crumble!
Meyer Lemons
There are two main types of lemons sold in the US. Meyer and standard. Meyer lemons have a softer, more orange skin. They’re more fragrant and have a less intense acid profile. They’re delicious in baking, and I recommend them for this recipe. If you can’t find Meyer lemons, regular lemons are fine. I would just use half a lemon, though.
