Honeynut Squash Soup and Chicken Grilled Cheese
Move over butternut there's a new squash in town đŸ¤
Morale has been exceptionally down this week. Like most people, I am dragging across the finish line to winter break. I’m in the mood for cozy comforting food with delicious seasonal ingredients. This soup is perfect for that. It’s warm and cozy with a crispy grilled cheese. It has protein and veggies, but it feels like a treat ✨
This recipe isn’t dairy-free because it has butter but it’s dairy light. I’m lactose intolerant but I don’t take it that seriously but if I eat a bowl of cream soup it’s not gonna be good. I know lactose intolerant people don’t take it seriously, so I feel like you guys get the vibe of this recipe (you can swap coconut milk for half and half if you want, though).
Honeynut is a newer squash that has gotten really popular this year and finally turned up in my local grocer. It’s sweeter and richer than a butternut squash but less grainy and stringy than an acorn squash. It makes a gorgeous creamy soup that’s sweet and decadent.
