I believe that what you put into your body has the most significant impact on your hair and skin health. Growing up, I had cystic acne, and no amount of creams and lotions did for my skin than what a better diet did. This soup is hearty, high in protein, and packed with amazing ingredients for your skin.
I think bok choy is the one that sleeps the most on vegetables. It’s affordable, basically flavorless, and absolutely packed with Vitamin A. It’s like eating your retinol. The carrots add a nice big punch of beta-carotene, giving you that lovely glow. And the bone broth and olive oil contribute good fats and collagen. It’s dairy-free (I find dairy really irritates my skin), and between the lentils and chicken, it’s super high protein.
This soup is so delicious on a cold winter day and is something I could truly eat on repeat.
You can easily make this recipe vegetarian by swapping the chicken stock for veggies and omitting the cooked chicken. Recipe below, enjoy!
