Enchilada Dense Bean Salad

This salad came to me in a dream

Dense Bean Salads have overtaken my life, and I’m not mad about it. I was soundly sleeping the night before my bachelorette in the TWA Airport Hotel when I woke up at 3 am. I remember nothing from the dream except the words ENCHILADA DENSE BEAN SALAD. I literally turned to my bestie Lauren and was like, “I need to make an enchilada dense bean salad when I get home.” She was definitely like “wtf is wrong with this girl,” but having come home and made this salad, I can confirm it’s delicious; my fiance thinks it’s the best one I’ve made. It takes enchilada sauce and incorporates it into the marinade and the dressing. It’s zesty and limey, and the enchilada cheeses add a delicious creamy layer. It’s reminiscent of the Chipotle Dense Bean salad but a bit lighter and crisper. This is delicious on it’s own or scooped on to a tortilla chip.
