Chicken salad is one of my favorite things to meal prep. It holds up so well in the fridge. You can eat it on its own straight out of the fridge or throw it in a fresh sandwich or wrap. This recipe gets a little extra flavor from the curry powder and some creaminess from the sour cream, if you’re not adding sour cream to your chicken salad; you’re missing out. If calories are also a concern sour cream is lower calorie than mayonnaise but tastes better than Greek Yogurt IMO. I love this recipe because it just gets better in the fridge throughout the week, the flavors really soak into the chicken. It makes about 6 servings. Enjoy!
