Chopped Cucumber Tzatziki Chicken Bowl
The perfect light and simple dinner to bring you into the New Year!
There’s no dinner I love like a big bowl of veggies in a delicious sauce with some marinated grilled meat. I’m not big on counting macros, but this one had a great amount of protein and nutrients per serving without sacrificing any flavor!
I’m generally against weight loss goals for the New Year but I’m a big fan of health goals. I feel like weight loss goals don’t necessarily promote healthy habits and set you up for disappointment. Eat more vegetables is one of my goals for the New Year, in this line “eat more diverse vegetables” is another one of my goals. I’m trying to improve my gut health, and the biodiversity of vegetables is a great way to do this! This recipe is light but filling and leaves me super satiated. This recipe is pretty easy in terms of skill level, but admittedly, it is a lot of chopping.
