Caesar Chicken Salad Cups
All the flavors of Caesar Salad in meal-prepable, high-protein chicken salad (served in crunchy lettuce cups)
The inspiration for this recipe comes from traditional Caesar salad dressing. I’m a big fan of a good punchy Caesar salad, ESPECIALLY a chicken Caesar. Unfortunately, it’s quite hard to meal prep since it doesn’t hold well in the fridge, and the protein content is lacking. These Caesar Chicken Salad Cups ai to solve that problem. It’s all the flavor of a Caesar Salad packed into a high-protein chicken salad you can meal prep and keep in the fridge for the week!
Caesar dressing is made with an egg yolk base, and you emulsify the oil into it and finish by seasoning with Caesar ingredients. Conveniently, this is the exact same method as making mayonnaise, so we can skip this step by just starting with mayo!
Since mayonnaise is the base of chicken salad, I thought it would be delicious to season the mayonnaise with the finishing ingredients of a Caesar salad and serve the salad in crunchy romaine cups. Effectively, it’s all of the flavors of a Caesar salad packed into a much higher protein snackable meal! You can also meal prep this base and keep it in the fridge for days.
