My neighbors are coming over tonight to watch the Logan Paul x Mike Tyson fight. I never thought I would say I’m excited to watch a fight on TV but it’s rare you get to watch influencers actually fight each other so needless to say I’m pretty pumped.
I am in the mood for some low-effort, high, pay-off entertaining, and my go-to for that is 7 Layer bean dip. My mom has been making this recipe for every tailgate/sports event since I was a little kid. It’s always a hit, there’s no cooking involved, just assembling, and it’s near impossible to mess up. You can prep this the night before and it’s even better the next day.
You can modify this recipe however you see fit: you can omit the olives and cilantro or add ground beef—whatever your heart desires. It’s almost guaranteed to still taste good. Ingredients
1 can of refried pinto beans
3/4 cup or 6 oz of red salsa (chunkier and less watery salsas tend to work better)
1 1/2 cup or 12 oz sour cream
1/2 a packet of taco seasoning blend
2 cups or 16oz guacamole
12 oz grated Mexican cheese blend (you can grate yourself but I get pre-grated)
3 green onions
3 tbs cilantro
1/4 cup sliced black olives
Instructions
Get a small baking dish (I used 6x9) and use a spatula to spread the refried beans along the bottom.
Pour the salsa over the beans and spread it out evenly
Mix the sour cream and taco seasoning and spread it over the salsa.
Spread the guacamole over the salsa.
Sprinkle the cheese evenly on top.
Slice the green onions and cilantro.
Sprinkled the green onion and cilantro over the cheese.
Top with the sliced black olives.
Store in the fridge and serve cold with tortilla chips
